Sweet Potato Pie

This is an authentic, southern-style, sweet potato pie. It really is the best sweet potato pie you will ever taste.

Ingredients

  • 1 large sweet potato (over 1 pound)
  • ½ cup butter
  • 1 cup white sugar
  • ½ cup milk
  • 2 eggs
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 (9-inch) frozen pie crust

Instructions

  • In a medium saucepan, cover the whole sweet potato in water (don’t peel it), boil for 40-50 minutes, until the sweet potato is pierced easily with a fork. 
  • Immediately run the cooked sweet potato under cold water. Remove the skin, which can now easily be removed with just your fingers. Be careful, the sweet potato will be hot. Remove any fibrous parts of the sweet potato. If you have a scale you can weigh the cooked sweet potato to make sure you have about 1 lb.
  • Put the cooked sweet potato in a large mixing bowl and add the butter.  Stir with a mixer until all the butter is melted and fully incorporated.  Next, mix in the sugar, milk, eggs, nutmeg, cinnamon, and vanilla. Mix until smooth.
  • Pour the mixture into the pie crust and bake at 350°F for 60 minutes. To tell when it's done, stick a butter knife in the center; when it comes out clean, it’s ready.  Letting it rest for an hour makes it easier to cut into slices.  Serve it warm for a much richer flavor.
