Chewy Cashew Bites

Finally! A way to make nuts easy to chew! This is one of the best snack foods to eat when you are short on time and low on blood sugar.

Equipment

  • Food Processor
  • Cookie Scoop

Ingredients

  • 2 cups cashews
  • 1/2 cup canned pineapple chunks
  • 6 dates
  • 1/2 cup shredded coconut

Instructions

  • Place cashews, pineapple chunks, and dates in a food processor and pulse until smooth.
  • Use a small cookie scoop to get uniform balls. Wet your hands to help keep the dough in the bowl instead of on your hands.
  • Coat the balls in the shredded coconut. If you find coconut annoying to chew, don't worry, just blend the coconut in with all the ingredients in the first step.
  • Place on a pan and refrigerate for 20 minutes or freeze for 10 minutes
