Place cashews, pineapple chunks, and dates in a food processor and pulse until smooth.
Use a small cookie scoop to get uniform balls. Wet your hands to help keep the dough in the bowl instead of on your hands.
Coat the balls in the shredded coconut. If you find coconut annoying to chew, don't worry, just blend the coconut in with all the ingredients in the first step.
Place on a pan and refrigerate for 20 minutes or freeze for 10 minutes
