Take a large pan, heat on medium heat, pour in the sesame oil, onion, peas, and carrots. Cook until veggies are soft.
Set the veggies aside and cook the eggs in the same pan, just make scrambled eggs. Combine the veggies back into the scrambled eggs.
Add in the rice and soy sauce, stir while cooking at medium heat until fried rice is hot. Top with chopped green onions.
