King of The Morning Muffins

In the realm of breakfast foods, this muffin’s right to rule is unquestioned. Orange zest is its crown and fiber is its scepter. May the sun never set on this muffin’s empire.

Equipment

  • muffin pan
  • blender or food processor (optional)
  • zester

Ingredients

  • 1 cup Bob's Red Mill 10 Grain Hot Cereal (run it through a blender if you want the muffin texture to be fine, otherwise it will be coarse but still very chewable)
  • cup buttermilk
  • ½ cup white sugar
  • cup softened butter
  • 1 egg
  • 1 cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • the zest of one orange
  • ¼ cup white sugar

Instructions

  • Mix the cereal and buttermilk in a small bowl and let it rest for 10 minutes.
  • In a large bowl, beat the butter and the 1/2 cup of sugar together, then mix in the egg.
  • Add the cereal/buttermilk mix, the remaining dry ingredients, and half the orange zest, stir until mixed.
  • Take the other half of orange zest and mix it with 1/4 cup of sugar.
  • Line a muffin pan with cupcake liners. Spoon the batter into the cupcake liners, filling each between 1/2-3/4 full.  Sprinkle each muffin with the zest/sugar mix.
  • Bake at 400° F for 15 minutes.
