In a small pan, heat oil and add the celery and onion. Cook until they become soft, about 3-4 minutes.
In a mixing bowl, mix in the chicken, egg, flour, hot sauce, and the cooked celery and onion. Once it is well mixed, add to a bread pan sprayed with cooking spray.
Bake for 60 minutes at 350° F. Let cool for 10-15 minutes before slicing and eating. I like to top it with more Frank's hot sauce.
