I went to Dental School in Buffalo, New York. In addition to learning about teeth and how to drive in the snow, I also learned about the magic and wonder of the Buffalo Wing. Buffalo Wings were invented in 1964 at the Anchor Bar in downtown Buffalo. I would go to the original Anchor Bar when I was on pediatric dentistry rotations. Chicken, butter, and hot sauce. It’s all you need. Buffalo Chicken Meatloaf combines the legendary flavor of Buffalo wings with the scientific innovation that is the modern meatloaf. It is filling, flavorful, and easy to chew; exactly what a good meal should be. When I eat Buffalo Chicken Meatloaf, it reminds me of my home away from home. It reminds me of Niagara Falls, 5 foot snow falls, Wegmans grocery stores, and a lot of time spent in libraries. So go and cook this recipe, make some memories of your own!
In a small pan, heat oil and add the celery and onion. Cook until they become soft, about 3-4 minutes.
In a mixing bowl, mix in the chicken, egg, flour, hot sauce, and the cooked celery and onion.
Once it is well mixed, add to a bread pan sprayed with cooking spray
Bake for 60 minutes at 350° F. Let cool for 10-15 minutes before slicing and eating. I like to top it with more Frank's hot sauce.

Buffalo Chicken Meatloaf is soft, moist, and contains multiple soft textures. It is soft enough that, with minimal effort, they can be easily formed into swallowable-sized portions.
if you require a pureed texture, just add the cooked meatloaf to a food processor and blend until smooth. You can add a little chicken broth if you need to thin it. Be sure to top the puree with hot sauce!
