Mix the flour, baking soda, and salt together in a bowl.
In a large mixing bowl (preferably a stand mixer like a kitchen aid), mix the butter and sugar on high for one minute. The add the eggs one at a time while mixing. Then mix in the vanilla and sour cream.
In a separate bowl, mix the flour, baking soda, and salt together. Then slowly add it into the mixed batter while mixing.
Spray a 9 inch loaf pan with cooking spray and pour in the completed batter. Spread it evenly. Bake at 350° F for 50-60 minutes, until a knife comes out clean.
Let it rest for 10 minutes, then it is ready to slice. It is soft and easy to chew already, but you can make it even easier to chew by adding cream, sugar, and mashed strawberries.
