    First-Class Pound Cake

    The most luxurious and comforting pound cake around.

    Ingredients

    • ½ cup softened butter
    • 1 cup sugar
    • 3 eggs
    • 2 teaspoons vanilla
    • ½ cup sour cream
    • cups flour
    • 1/4 teaspoon baking soda
    • teaspoon salt

    Instructions

    • Mix the flour, baking soda, and salt together in a bowl.
    • In a large mixing bowl (preferably a stand mixer like a kitchen aid), mix the butter and sugar on high for one minute. The add the eggs one at a time while mixing. Then mix in the vanilla and sour cream.
    • In a separate bowl, mix the flour, baking soda, and salt together. Then slowly add it into the mixed batter while mixing.
    • Spray a 9 inch loaf pan with cooking spray and pour in the completed batter. Spread it evenly. Bake at 350° F for 50-60 minutes, until a knife comes out clean.
    • Let it rest for 10 minutes, then it is ready to slice. It is soft and easy to chew already, but you can make it even easier to chew by adding cream, sugar, and mashed strawberries.

    Easy To Chew

    First-Class Pound Cake is soft on its own but can easily be made even softer.  Add cream or mashed strawberries (see the cooking tip below) to make it easier to chew. If you require a pureed texture, it can be made into a puree by soaking the cooked pound cake in milk or cream overnight in the fridge.

    Toppings give another delicious layer of flavor to pound cakes. My favorite is a strawberry topping. To make it do the following:

    •  Take some fresh or frozen strawberries and warm them in the microwave
    • Add some sugar to taste
    • Add a little vanilla for a smooth flavor

    Pour the strawberry topping over the pound cake and let it soak in. This will make it even easier to chew and swallow. Top it with whipped cream while you’re at it. Making a food easy to chew DOES NOT mean you have to compromise on flavor or quality.

    A good loaf pan is helpful for a lot of dishes, but it is mandatory for pound cake. This one is nice because it has a lid which makes storage super easy.
