I always thought that Chia seeds were something you added to Chia pets. Much like this one.

As it turns out, Chia seeds are food. Not just any food, they are highly nutritious and absorb A LOT of liquid. This liquid absorption is so much, that whatever you add them to, turns jelly-like. Chia seeds have been used as a gelatin substitute for many drinks and dishes. In this case, it is the star of Chocolate Chia Seed Tapioca.

    Chocolate Chia Seed Tapioca

    Ingredients

    • ¼ cup cocoa powder
    • 2 tablespoons maple syrup
    • 1 pinch salt
    • ½ teaspoon vanilla
    • cups chocolate almond milk
    • ½ cup chia seeds

    Instructions

    • In a bowl, combine the cocoa powder, syrup, salt, and vanilla.
    • Slowly add the chocolate almond milk until it forms a paste. Then you can add the rest of the chocolate almond milk, stirring until its smooth.
    • Add the chia seeds and stir until combined.
    • Cover with plastic wrap and refrigerate for at least 3 hours. It is best served while still cold.

    Easy To Chew

     Chocolate Chia Seed Tapioca is soft, moist, and contain multiple soft textures. Any dense ingredients have been prepared so that there are no pieces larger than ¼ inch (or 6mm). Level 2 foods are soft enough that, with minimal effort, they can be easily formed into swallowable-sized portions.

    1 ounce of chia seeds contains 23% of your daily recommended amount of magnesium, 12% of your iron, and 40% of your dietary fiber.

    Chia seeds absorb up to 12 times their weight in liquid. When they absorb liquid, they develop a thickened, gooey coating that gives a gelatinous texture to the dishes they are in.

    I like these glass baking containers because they are great for puddings, custards, and mousses. I also love that they have lids, making them great storage containers as well.
